Winter Popular Vegetable: Squash

Winter is here and it's squash season. There is a variety of winter squash available in the market to choose from. Winter squash is actually harvested during summer season but it gets this particular name based on how much it can be kept and stored without refrigerating it. It can be stored at a dry place for up to 6 months long. Incorporating squash into your diet is beneficial and nutritious for you as is high in fiber, it also contains a variety of minerals and vitamins such as vitamin C, B6, A, and potassium and is also rich in antioxidants. It can eaten, steamed, roasted, sauteed or putting it into a soup. For example, you can bake it at 400 degrees for 40-50 minutes and can be consumed with maple syrup, cinnamon, rosemary or chilli pepper. It is important to know that all squash should have their seeds removed prior to cooking and can be peeled prior or after cooking. Squash can be also added to your diet as healthy snack.
In general squash is easy to store and to cook. Some types of squash include: buttercup, delicata, butternut, spaghetti squash, sugar pumpkin and acorn squash. Let's go through the different qualities, taste and colour of each one.
Buttercup is dark green with sweet orange flesh and is used for sweet and savoury dishes.
Delicata becomes soft when cooked so no need to remove skin and its flavour is starchy. It can be used as a side, inside a salad, or put into a dip.
Butternut Squash is the most classic and popular type of squash. It has a yellow skin and is sweet and starchy. It is a good alternative to potatoes. You can puree into soup or roast it together with other veggies and eat it as a snack or side dish. Butternut squash soup is the most popular dish that you can make using this type of squash.
Spaghetti Squash has a yellow skin with starchy flesh and not sweet. Its flesh can be used as a pasta replacement.
Sugar pumpkin is small and sweet. Becomes creamy when roasting, steaming, or pureeing.
Acorn Squash has dark green skin and orange flesh. It is sweeter than delicata. It is perfect for filling and roasting with sage and other vegetables.
